A Taste of China

The Chinese are extremely creative in their cooking; it is estimated that there are over eighty thousand different dishes in Chinese cuisine. They are also artistic in the presentation of their food, believing that food should appeal to more than just the sense of taste. In addition to having good flavor, a dish should be fragrant, colorful and attractive. In a single meal, the various foods should have contrasting textures, and the flavors should maintain a balance between strong and subtle, spicy and bland.

• northern: Peking, Shantung and Honan;
• coastal: Fukien and Shanghai;
• inland: Szechwan and Yunnan;
• southern: Canton.
